Choose the region for the data hosting

Hello,

In Europe, the debate about the data protection rules are more and more present.
I think it could be difficult to use Coda :coda: lawfully in some contexts.

Give the opportunity to choose the region (or self hosted) where the data are saved could be a big step to the internationalization. Make (ex-integromat) starts to do it for example.

Dear @j.b_o,

I fully understand your concerns, I am like you located in the EU, but Coda complies with the GDPR regulations.

I am not 100% sure, but it could be that our data is already hosted in a datacenter in the EU.
