Tried to log out of the mobile app today and the Sign Out button doesn’t work.

Weird, I just tried on my Android mobile device, and no problem.
You might want to re-install, to see if this solves the issue.
Otherwise it will be good to share the details of your device / app with the support team. 
Ah yeah, deleting and redownloading worked.
