Schedule Tracker: Removing Sundays

I am working on a schedule tracker for a construction company. I have the basic table figured out with dependencys set up. The one piece I cant seem to figure out is how to remove sunday from the working schedule. What is the best way to do this? I have attached the link below to the sample tracker;

Any ideas or ways to improve this would be appreciated also.
