Does anyone know if you can hide Pages and Subpages from the Navigation bar only?
So that those pages will still be viewable and accessible through internal linking etc, but just not visible in the navigation bar?
That’s the default behaviour. They are not visible but continue to be available through links, search, etc. If you somehow access a hidden page, it will appear ‘grayed out’ on the navigation bar (and its parents), but only until you navigate to another page.

Ah, brilliant - was unsure as am currently trialling Coda on the free plan. This helps a lot - thank you
