I was wondering if anyone has a work around to allow me to have a lookup column that acts like a selector list but the text values are in fact dates. And if so, how would this activate a reminder?

Or, you could achieve basically the same thing with an automation. It might not always apply instantaneously but the date will appear within a couple of minutes after you select something from the “When” column:
