hi there! is there a way to set up something where I can just drag and drop undated items/tasks to the calendar view?

something like this: Calendar | Infinity (Undated Items section)

Unfortunately there is no way of doing this in Coda right now. It looks very handy though! I encourage you to post it as a suggestion so people can vote on it and if it gets enough love Codans may implement it one day!
