I’d like for form respondents to not be able to add text beyond a certain number of characters. Is this possible?
If not, how could I at least display the number of characters already inputted so the user can be aware.
Any thoughts or workarounds would be much appreciated

I think there are several ways to do it and a start of track here Coda | Formula library or with a count(), or Coda | Formula library .
I am not an expert but I would look with this type of formula to combine.

Dear @Chris_Colucci1 , welcome to the Coda Maker community.
In the sample below the character count is limited to 6, of course you can set that to the value of your preference.
You go to the edit lay-out at the forms section
Then you double click on the column you want to put the setting on, in our case the name:
