Is it possible to see when a collaborator last viewed the document?

You can check the version history on the menu from the name of the doc on the top left corner on the open document.

Once you open that, there will be a left panel with all the changes, the time they were made and who made them.

This only tells you if changes were made, not if someone opened the doc or just viewed it without making changes
