Is it possible to hide remove the “Blank” option from my Select Lists? Or at least have it appear at the bottom?
Nope, not possible when you use a select list in a table. Only if the select list is on canvas or if you are using a relation in a column/canvas.

There is no easy way to remove “Blank” from the drop down, but you can have an automation that maps any “Blank” to some other default setting.
